A fresh fig is a small luxury, soft, sweet and surprisingly fragile, and it rewards everybody who treats it gently.
Fig trees love hot, dry summers and suit the Mediterranean climate very well. A fig does not ripen after it is picked, so it has to be harvested when it is ready, by hand and a few at a time, often several times a week during the season. Fresh figs are mostly harvested from late summer into autumn.
Because the skin is thin and the fruit is soft, fresh figs have a short life and need careful packing in a single layer and a cold chain with no breaks. Figs are also dried, which is a different product and keeps much longer.
