Courgettes are one of the fastest-growing vegetables there is, and that is exactly why timing matters so much.
The plants like warmth and regular water, and the fruit is harvested young, while it is still tender and the seeds are small, which means the fields have to be visited every day or two during the season. Left a few days too long, a courgette quickly becomes large and watery.
The skin is thin and marks easily, so courgettes are picked and packed with care, and kept cool but not cold, because they do not like temperatures much below 7 degrees. Fresh, they stay at their best for about a week.
