Green leaves are the most delicate products we deal with, and they need a quick, cool journey from the field to your door.
Leafy greens and herbs grow best in cool weather and grow fast, so the harvest comes only a few weeks after planting. They are cut by hand, usually early in the morning while the leaves are still crisp and full of water, and then cooled straight away, because every hour in the warmth costs freshness.
Once cooled, they are kept just above freezing in humid conditions, which keeps the leaves firm and green. For this product more than any other, the cold chain is part of the quality.
