Peppers bring colour to the plate, and the colour tells you a lot about how long the pepper stayed on the plant.
They are a warm-season crop, grown mostly in greenhouses or under tunnels, which give steady conditions and a long harvest. A green pepper is simply picked before it is ripe, while a red, yellow or orange one has been left to ripen fully on the plant, which takes several more weeks and gives a sweeter, softer flavour.
Peppers are picked by hand with a little stem attached, to protect the fruit. They keep for a week or two in a cool place and prefer not to be stored too cold, so a moderate temperature suits them best.
