Tomatoes are the product everybody thinks they know, and the one where small differences in growing make the biggest difference in taste.

Tomatoes love warmth and light, and much of Morocco's winter and spring production is grown in greenhouses in the south of the country, where the climate stays mild while it is cold elsewhere. The plants grow tall along strings and the fruit is picked by hand, bunch after bunch, over many weeks.

The colour at harvest depends on the journey: fruit that has to travel far is picked when it is just starting to turn, so that it arrives at its best, while fruit for nearby markets can stay longer on the plant. Tomatoes should not be kept in a cold fridge, because below about 10 degrees they lose flavour and texture.
