Dried fruits are a way of keeping the best of a harvest for later, and the quality of the fruit before drying decides the quality afterwards.
The fruit is picked fully ripe, because that is when it holds the most natural sugar, and it is then dried, in the sun or in drying rooms, until most of the water is gone. The drying has to be steady and clean: too fast and the fruit hardens on the outside, too slow and it can spoil.
Dried fruits keep for months when stored in a cool, dry place away from light and strong smells, so they suit customers who want a longer shelf life and a more flexible supply through the year.
