Citrus is one of the great strengths of Moroccan agriculture, and a good orange or mandarin still tastes of the sun it ripened in.

Citrus trees love mild winters and long, bright summers, and the cool nights of autumn are what bring out the colour of the peel and the sweetness of the juice. The fruit only ripens on the tree and does not get sweeter once it is picked, so the harvest is timed with care and done by hand, with clippers, so that the peel is never torn.

The season runs from autumn into spring depending on the variety, with the early ones coming first and the late ones, like Valencia, closing the season. Kept in a cool and airy place, citrus stays in good shape for weeks, which makes it a very practical fruit to send over long distances.
