Clementines and mandarins are the easy-peel citrus, sweet and very popular with families.
These small trees like mild, sunny weather and cool autumn nights, and the fruit is among the first citrus of the season, usually from autumn into winter. The skin is loose and tears easily, so the fruit is clipped by hand with great care, and the same looseness means it needs gentle handling afterwards. The area around Berkane, in the north-east of Morocco, is well known for its clementines.
Kept in a cool, airy place, they stay fresh for a couple of weeks.
