A good melon is all about timing, and that is why we care so much about when it was picked.
Melons and watermelons are warm-season crops that grow along the ground and need plenty of heat and sunshine. Growers usually water less as the harvest approaches, which concentrates the sugars and makes the fruit sweeter. A melon does not get sweeter after it is cut from the plant, so it is picked only when it has reached the right maturity, judged by the colour of the skin and the state of the stem.
The harvest generally runs from spring into summer. Whole melons keep well for several days in a cool, dry place, and they are best handled gently, because bruises show quickly.
