Watermelon is mostly water, which is exactly why it is so refreshing on a hot day.
The vines spread along the ground and need plenty of heat, sunshine and room. A watermelon does not ripen after it is cut from the vine, so growers look for the signs: a pale patch where the fruit rested on the ground, a dried tendril near the stem, and a hollow sound when it is tapped. The harvest generally runs from spring through summer.
Whole watermelons keep well for a while, but they are heavy and bulky, so packing and loading are planned with care to avoid cracks and bruises.
